  • 1 Clove of garlic
  • 500g Spinach
  • 250g Pasta (z. B. Penne)
  • 2 Tbs Oil
  • 100g Parmesan or vegetarian Montello (piece)
  • 4 Eggs (Size M)
  • 100g Cream
  • 250g Ricotta

Cooking Steps

  1. For the pasta, boil approx. 3 l salted water (approx. 1 tsp salt per liter). In the meantime, peel and finely dice the onion and garlic. Sort the spinach, wash well and drain.
  2. Cook the pasta in boiling salted water according to the packet instructions. Heat the oil in a large pan. Sauté the onion and garlic. Add the dripping wet spinach.
  3. Sauté the spinach for 3-4 minutes, stirring, until it has collapsed and the liquid has evaporated. Season with salt, pepper and nutmeg.
  4. Preheat the oven (electric stove: 175 °C/convection oven: 150 °C/gas: see manufacturer). Grease a springform pan (approx. 20 cm Ø) that closes well. Also wrap the outside of the tin with 2 sheets of aluminum foil.
  5. Drain the pasta. Finely grate the parmesan. Mix the eggs, cream, ricotta and Parmesan, except for 2 tbsp. Season well with salt and pepper. Mix the pasta, spinach and egg cream in a pan.
  6. Pour everything into the dish and sprinkle with 2 tbsp Parmesan. Cover with aluminum foil and bake in a hot oven for 45-50 minutes. Bake the last 15 minutes without the foil. Remove from the tin and serve.
